To the Moon Waffles!

Pumpkin Pancakes
4 eggs
4 cups flour
1 stick butter
1+ cup milk
½ cup vegetable oil
1 cup pumpkin
1 tsp pumpkin spice
3 tbsp sugar
3/4 tsp salt
3 tsp real vanilla
Wisk batter until smooth. Add milk to make thick batter. Small lumps will be visible. Preheat and butter waffle iron. Cook waffles until golden brown.

Waffle batter can be made ahead and kept in refrigeration for up to a week.

Variations:
For a fabulous vanilla waffle, omit pumpkin and pumpkin spice
Add one of the following ingredients for a flavor-filled, fabulous waffles!
